                   schezwan chutney


1/2 cup vegetable oil
red chilly paste
20 garlic chopped
2-4tsp ginger chopped
Salt to taste
1tbsp sugar
tomato ketchup(4 tbsp)

Soak 30 dried red chillies for 30 minutes in half cup of warm water(or cold water over night). Grind to a smooth paste in a grinder(using the reserved water on soaked chillies)

Method
- In a pan heat the oil on high flame. Once the oil is smoking add garlic and stir it till it turn lightly golden.
- Add ginger and stir fry on high flame. 
- Add chilli paste and let it cook properly then add little water and let it cook.
- Now add in ketchup,sugar and salt to taste 
- Cover the sauce with a lid 
-Simmer this sauce for 5 to 8 mins.

Now the sauce is done. Cool this and store in a clean air tight container refrigerated.
